Why should I eat live, probiotic foods?
At the heart of probiotic theory is the fact that you need certain bacteria and yeasts in your digestive system to thrive: mainly strains of lactobacilli, bifidobacterium, and the yeast saccharomyces boulardii. You've had them in you since you were born, and they've tried their best to keep you as healthy as possible. In a perfect world, these bacteria happily make your digestive system their home and, in doing so, keep your digestive system working well. But it's not a perfect world. So what can probiotics specifically do for you? While the FDA has not formally ruled on probiotics or formally accepted the benefits below, studies of probiotic bacteria and yeasts have generally been found to have these effects on people:

So what does fermentation do to foods?
Lacto-fermentation, the general (but not only) method of preserving foods through fermentation, is a neat little process done completely through natural means. Basically, lactobacilli, a symbiotic bacteria family that already lives in your intestinal system, is added to fresh vegetables and salt and allowed to grow. These friendly guys eat the starches and sugars in the veggies and turn them into lactic acid. This does a couple of things:
--gives the product a tart but excellent taste
--preserves the product naturally for a long (months, sometimes years) period of time
--enables you to preserve products without cooking them, giving the product a unique, fresh taste that cooked products can only dream about
--provides a home for these friendly lactobacilli, which makes the fermented foods probiotic
--lowers your gut pH, making it a better home for these cultures and making it harder for bad bugs to affect you
--kills any bad bacteria and makes it impossible for other bugs to get in and make a home for themselves
--creates B vitamins that the product did not have before

How does Zukay create these products?
Pretty much like it's always been done. They cut up raw veggies, mix them up, add their own probiotic culture (containing lactobacillus acidophilus and another great strain, bifidobacterium) and let the products ferment for a few days until it's done. That's it. It's certainly more care than most shelf-stable products get, as the folks at Zukay need to keep a close eye on it for a few days, but they're more than willing to do the work so you get an incredible product.
